Need some good ideas for dinner in a hurry? These are recipes I found through Pinterest that I love and make over and over! They can all be made with whatever chicken you have on hand….leftover chicken, canned chicken, rotisserie chicken, or just fresh or frozen chicken breasts.  I love these with leftover chicken because it makes the prep time SO much faster!!

Creamy Chicken and Rice

We LOVE this recipe from Kristen at A Mind Full Mom It’s oh so yummy and creamy! There are many versions of this recipe, but I like this one because it does NOT use canned cream of chicken.  I prefer the taste of thickened chicken broth that I do myself.  Is still super easy and fast! If you use leftover chicken and cook the rice ahead of time, it is very fast to assemble and put in the oven! Also great for making ahead and reheating when you need.

I follow all the directions exactly EXCEPT I use white rice instead of brown.  You can use any rice you want, just make sure you have about 4 cups of COOKED rice for the recipe.

Creamy and Cheesy Chicken and Rice

4 Tbs butter
2 Tbs fresh minced garlic
2 cups shredded, cooked chicken breast
4 cups steamed brown rice (4 cups AFTER cooking) This is 1 cup uncooked brown rice
1/4 cup all purpose, unbleached flour
1 tsp kosher salt
1 tsp black pepper
2 cups chicken broth
2 cups shredded cheddar cheese
Top with 1 1/2 Cups shredded cheddar cheese (optional)
1 Tbs fresh chopped thyme (optional)

Chicken Noodle Casserole

WOW! Comfort on a plate!  This turned delicious recipe by Holly at Life in the Lofthouse turned out so yummy and ALL of us loved it! This is one of those dump-everything-in-a-bowl type of recipes.  Basically you cook the egg noodles ahead of time and drain.  Then just dump everything together and pour into a casserole dish! That’s it!  So simple and easy and can totally be done ahead of time too. My daughter actually made this one completely on her own (She’s 11 years old).  It totally made her day when her teenage brother gave complements to the chef!

I follow all the directions exactly EXCEPT I do NOT use Cream of Mushroom (I hate mushrooms), so I just double the Cream of Chicken or use Cream of Onion on this one.

2 cups uncooked egg noodles
2 cups cooked, shredded chicken
1 (10 oz.) package frozen peas and carrots
1 (10 oz.) package frozen corn
1 cup milk
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of mushroom soup
salt and pepper, to taste
1/2 Tablespoon dried minced onion
2 Tablespoons melted butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning (optional)
 

Chicken Tetrazzini

Another favorite and super easy chicken dish is this one.  Kristyn at Lilluna posted this recipe.  Again, super simple…just precook the noodles, dump everything but the cheeses in a bowl and combine, then put it in a casserole dish and top with the cheeses!  I’ve made this for potlucks and taken it to new mothers.  I always get a great review!

I follow the directions exactly on this one! Too simple!

Chicken Tetrazzini

16 oz linguini, cooked
1/2 cup butter, softened
4 chicken breasts, cooked, diced
2 cans cream of chicken soup
2 cups sour cream
1 tsp kosher salt
1/2 tsp ground pepper
1/2 cup chicken broth
2 TB Parmesan cheese
2 cup shredded mozzarella
